To talk about dipping is to talk about appetizers. What is a dipping? Most of the time a dipping is a dish, which doesn't satisfy a persons appetite while the main course is being prepared. It allows the host to entertain his or her guests while having a glass of wine, champagne, or drink while delighting their taste buds in preparation to the meal. There are thousands of dips which can be can be prepared, like spinach, bean, onion, shrimp, etc. Nevertheless, there is also oil dipping. Most of these are olive oil based, because of its delicate bouquet and health aspects. It is also used to give the stomach walls a protection film, which helps digestion – and so is the function of wine. Nevertheless, a glass should be sufficient and over drinking or over eating is never healthy. A meal usually is accompanied by an appetizer, then with a wine and finally with a liqueur (sweet). At the end of such a meal your guest will not feel uncomfortable, or feel they have over eaten – considering of course the quantity of food being served. Quality is better than quantity!

So, if you create a dipping to spend some time with friends or as an appetizer to a great meal, always create a balance of dishes, taste and health. Dipping can be accompanied by crackers, toasted rounds of white bread, or any kind of bread that will not take away the taste of the dipping itself. 

Remember it is OK to have fun food once in a while but it is most important to eat balanced meals daily, drink eight 6oz cups of water and walk at least a mile a day!

SOUTH WEST GARDEN HAMMUS*

(Spicy Chick Pea Dip)

*Recipes call for organic ingredients.

Serves 6

Ingredients:

3 (15 ½ oz. cans chick peas (garbanzo beans) drained

1 table spoon of GARLIC CAYENNE FLAVORED RICE BRAN OIL

1 table spoon of GARLIC ORANGE FLAVORED RICE BRAN OIL

1 table spoon of GARLIC GINGER FLAVORED RICE BRAN OIL

1 teaspoon minced onion

1 table spoons of sherry wine

1 table spoon chopped fresh parsley

1 table spoon of chopped walnuts

Salt to taste

Preparation:

Put into a blender the chick peas, the oils, the onion, the sherry, salt and pepper and blend into a paste. Remove and place in a bowl. Let it sit overnight in the refrigerator.

Add the chop the chopped walnuts, fresh parsley and serve at room temperature.

Place along side toasted bread rounds.

Enjoy with a chilled glass of Vim Juice!
