In BAKING we use butter or oils. Olive oil is not recommended because of its unique flavor. On the other hand the use of flavored oils when baking is becoming popular. For instance, when preparing a spicy crust with a cayenne or jalapeno oil, its flavor will give your dish a distinct bouquet. Another popular use for flavored oil is adding it to your pasta. Traditionally, before placing the pasta in boiling water, we add the flavored oils and then place the pasta in the water. This allows the flavors to adhere to the pasta. But if you have a pasta maker, or a food processor you can give your dough a different and unique flavor. For example, a vegetarian spicy lasagna with orange and cayenne flavored oils will add an extra flavor to the pasta mix, or a jalapeno pizza with the jalapeno flavored oil added to the pizza crust. Even when preparing garlic bread, you can go one step further by adding that special flavor - same goes for a soufflé or a seafood batter. After all, the fun of cooking is experimenting and surprising our loved ones!

Remember it is most important to eat balanced meals daily, drink eight 6oz cups of water and walk at least a mile a day!

Spicy Chilean Empanadas*

(meat, turkey or cheese pies)

*Recipes call for organic ingredients.

Serves 4 Adults (two empanadas a piece)

Ingredients:

1 pound of ground beef (turkey or cheese)

3 white onions

2 eggs

1 can of black olives (medium size)

1 bay leaf

Garlic Cayenne TOFC flavored oil

Ground cumin beef or chicken stock

Organic flour (pre-mix)

Salt to taste

Preparation:

(For beef or turkey) Place unflavored high burning point oil in a pan. Place ground beef or turkey in the pan at 400-490 degrees F. Cook for two minutes or until meat is brown. Remove from stove and place the meat in a strainer to drain the excess fat in cold running water. Let it sit until all the water is drained

Chop the fresh onions into mince pieces. Place in a pot the meat, one tablespoon of the Garlic Cayenne TOFC Flavored Oil, the beef or chicken stock at a medium heat (280-300 degrees F.) Add the bay leaf, one tablespoon of cumin, and salt to taste. Mix well. Let it simmer for five minutes at 250 degrees F. Remove from pot and place in a bowl. Let it cool down and place in the refrigerator overnight.

Preparation of the empanadas the following day: Place a cup of organic flour on a wooden board a mixer or a food processor. If on a wooden board or tabletop, make a crater in the center of the flour; place three tablespoons full of water with salt to taste, and half a stick of butter. Mix the flour with the water and butter until it becomes dough. Add more water or flour as needed. Place the dough into a roller machine and spread out the dough on the wooden board or tabletop. Place some flour on the board so it doesn’t stick. Let it rest for a few minutes. Hard boil an egg and cut them in thin slices and every slice in four. Drain well the black olives and cut them in half. Cut the dough into five inches in diameter.

Preparation for beef (turkey or cheese.) Place a tablespoon full of the beef or turkey mix (from previous night) onto one side of the dough rounds. Add a fourth of an egg slice and a half olive. (For extra spicy add two or three drops of Garlic Cayenne Flavored Oil.) Fold the dough in two. Wet the sides with water and firmly close the dough so nothing can escape from inside. Beat an egg until it is well mixed and carefully brush the mix on top of the empanada. Bake the empanada at 450 degrees F. for 10 minutes.

To fry, place some unflavored high burning point oil in a skillet and fry at high for a minute or two or until the empanada is golden brown. For cheese empanadas, cut your favorite cheese in small cubes and place them on the cut dough. Add two or three drops of Garlic Cayenne Flavored Oil and close them well. Brush the batter egg over the top of the empanada; place them on a cookie sheet in the oven at 450 degrees F. or on a flying pan until golden brown.
